Ode to Vegetables, the final weeks …

Apologies up front for a lapse in posting the adventures of the 4 week vegetarian.   Moved homes, so was busy packing and moving.  That being said, the all vegetarian eating did end on January 26, when I felt I needed more protein for strength to move – which was probably a mind over fact thing, but I was getting a little irritable without some animal protein in my diet : (.

These final weeks I made some of my favorite recipes, I made the curried sweet potato soup again, but added kale this time and then made some new yummy dishes such as : Cauliflower Steak with a Walnut Caper Salsa with a side of Wild Rice with Mushrooms and Butternut Squash with a sprinkle of Parmesan; Rice Noodles with Tofu and Julienned Vegetables in a Garlic Peanut Sauce; and Eggplant stuffed with eggplant, tomatoes, bulgar, and summer squash.

I enjoyed experimenting and trying new recipes and will definitely make quite a few of the dishes again for myself and for clients. But will I become vegetarian or vegan full time? ….Probably not at this time, but it gave me a renewed appreciation for those who are, and a renewed appreciation of vegetables and fruits.
