
Low Carb, Low Sugar Life : A No Bake Dessert to Fill that Sweet Craving
Revisit your childhood with this easy and delicious dessert – sugar-free jello with a sweet cream cheese dollop and fresh berries! Berries are abundant in the market now and are oh so yummy!
This dessert elevates jello with a no bake cheesecake filling under and on top of it.
Sugar-free Jello Berry Cheesecake “Trifle”
Ingredients:
1 – 0.3 oz. package of sugar-free jello
1 – 8 oz. package of cream cheese at room temperature
1/3 cup Monk Fruit Sweetener
1 teaspoon vanilla extract
1 teaspoon fresh squeezed lemon or lime juice
a package of your favorite fresh berries for topping
Directions:
Make the jello according to package direction and chill until firm.
Once the jello is firm and set, make the cream cheese mixture, which tastes like a no-bake cheesecake.
Using either a hand- mixer, or a stand mixer, put the cream cheese, monk fruit sweetener, vanilla and lemon juice in a bowl and mix at first on medium and then on high speed until mixture is completely combined and whipped until creamy and fluffy. Alternately if you have a food processor, you can add all the ingredients in the processor with the blade attachment and combine until creamy and fluffy.
Put a tablespoon of the cream cheese mixture on the bottom of individual dishes, top with some of the jello (enough for one person), then put another dollop of cream cheese mixture on top, and then top with a handful of fresh berries.
This is a delightful dessert that satisfies those sweet cravings, tastes a little decadent, but it’s sugar-free and very low carb! Enjoy!
